You'll hear from his days as a boy cheering for Mark Messier with the Oilers, to his days as a cabana boy in Palm Springs to not doing much in college but being great at girls and drugs.  Somehow, he parlayed that into opening one of the country's best Lyonnaise restaurants without ever having been to Lyon.  He'll talk about how arrived at the Jewish grandmother approach to running a busy kitchen.  The hard way.

After a few delays, the food/horror short film "Food Cart" has been released, and can soon be seen at the upcoming CHOMP Food Film Fest.

This week's classic episode of Right of the Fork features Damian Magista, and Lucas Longacre.

The duo join us to discuss the genesis of the plot, the filming thereof, and what their expectations are. 

About CHOMP:

A night of eclectic films, food & beer. The mission of Chomp! is to explore our relationship to food through film. This inaugural event’s theme is horror.

Featuring short films by local artists Mila Zuo, Kelly Cox, and Cooper Johnson and more. Hosted by Dirk Marshall of the popular VHUS Podcast. Filmmakers will be on hand for Q&A and networking after the programming.

Portland’s own Pono Brewing company will be releasing a limited release Red IPA along with Chef Sarah Schneider serving up some killer grub.

#203 Sam Bretz & Kay Tustin - Restaurant Beck and Sorella

Sam and Kay met in Kalispell, Montana, and have journeyed and cooked around the Pacific Northwest since.  Their travels took them to Alaska and then to Portland honing their skills in savory and pastry, respectively. After working their way through numerous positions, they both landed at Irving Sreet Kitchen.  Sam then jumped at the opportunity to cook at the storied Restaurant Beck, where he took charge of the kitchen in a matter of a couple of years. Kay followed him to the coast to become pastry chef at Beck and its sister restaurant, Sorella.  The two are very young and very talented. 

They joined us by phone to talk about their love affair with each other and the restaurant business.

#202 Nate Tilden - Restaurateur

Hard to believe it took us 6 years to finally have Nate Tilden on the podcast (our fault, not his!). 

Nate has been working in the restaurant industry for well over 20 years, having started out as a dishwasher and then working his way up to chef.   He managed Castagna for a  few years, before opening up Clyde Common in 2007. In 2010, he opened the sports bar Spirit of 77 in the Rose Quarter.  He's also the co-owner of Olympia Provisions, Bar Casa Vale, Rushmore Baking and more.
